This is the recipe Mom has been asking for since she was out here visiting us...it's from our "Easy Dinners, Healthy Recipes" cookbook.

Slimmed Skillet-Style Lasagna

Start to Finish: 35 mins
Makes: 6 servings

Ingredients:
8 ounces uncooked ground turkey sausage
1/2 cup chopped onion
2 cups bottled spaghetti sauce
1 cup water
2 cups dried wide noodles (vegetable bow-ties work well too)
1 1/2 cups coarsely chopped zucchini
1/2 cup fat-free ricotta cheese
2 tablespoons freshly grated Parmesan or Romano cheese
1 tablespoon snipped fresh parsley
1/2 cup shredded reduced-fat mozzarella cheese (2 ounces)

Directions:

1. In a large skillet, cook sausage and onion until sausage is browned, breaking up sausage during cooking. Drain off fat. Stir in spaghetti sauce and the water. Bring to boiling. Stir in uncooked noodles and zucchini. Return to boiling; reduce heat. Cover and simmer about 12 minutes or until noodles are tender, stirring occasionally.

2. Meanwhile, in a small bowl, stir together ricotta cheese, Parmesan or Romano cheese, and parsley.

3. Drop cheese mixture into 6 mounds over the sausage-noodle mixture in the skillet. Sprinkle mounds with mozzarella cheese. Cover and cook on low heat for 4 to 5 minutes or until cheese mixture is heated through. Let stand 10 minutes before serving.

Nutrition facts per serving: 235 calories, 8 g total fat, 38 mg cholesterol, 418 mg sodium, 26 g carbohydrate, 18 g protein.
