Cheap eats for tough times

Ham Hock and Mixed Grain Stew
It's no secret that the economy sucks right now. In the past few months, I have been making a conscious effort toward more frugal consumption (except for those days when I'm too lazy to pack a lunch... which is actually fairly often, unfortunately). This includes cooking with cheaper cuts of meat and bulk dried grains. Dried grains are an excellent source of protein and have a shelf life of approximately 532 years. Hence, they come in very handy during major blizzards, nuclear holocausts, and other such apocalyptic events -- provided one still has access to potable water. Here is a loose "recipe" (read: anecdotal account) for a simple, hearty stew that promises to warm the soul and ignite a stock-buying frenzy.

  • Over medium-high heat, coat the bottom of a large pot with "EVOOO!" (extra virgin olive oil only!). Add 2 tbsp unsalted butter and allow to melt.
  • Add 3 - 4 fresh ham hocks (seasoned with salt) and brown all sides.
  • Add 1 chopped medium sweet onion and 4 chopped carrots.
  • Add 1 cup frozen corn, 1/2 cup green split peas, and 1/2 cup yellow split peas.
  • Add 1 can (14 oz.) chicken broth and 1 cup water.
  • Add seasonings -- in this case, I used cumin, coriander, adobo spice, celery salt, garlic powder, and Italian spice mix (basil, oregano, rosemary, thyme, sage, marjoram).
  • Simmer for 2-3 hours over low heat so that the stew remains just at a boil.
  • Add 1/2 cup barley and 1 cup water. Simmer for another 1 hour.
  • Note: More water may be added to achieve the desired consistency.


    I estimate the cost of this dish to be about 50 cents per serving.
